
Pollo Asado
Pollo asado is a delicious Mexican grilled chicken dish with a favorful marinade.
Ingredients
- 1 whole chicken, cut into pieces
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon ground coriander
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt (adjust to taste)
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 2 tablespoons white vinegar
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
Method
- In a bowl, mix together the minced garlic, cumin, oregano, smoked paprika, chili powder, coriander, black pepper, and salt to create the marinade.
- Add the fresh orange juice, lime juice, white vinegar, chopped cilantro, and olive oil to the spice mixture. Whisk everything together until well combined.
- Place the chicken pieces in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, making sure each piece is wellcoated. Seal the bag or cover the dish and refrigerate for at least 2 hours or preferably overnight. This allows the favors to penetrate the chicken.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off.
- Grill the chicken pieces, turning occasionally, until they are fully cooked and have a nice char on the outside. This usually takes about 20-30 minutes, depending on the size of the pieces.
- Check for doneness by making sure the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for a few minutes before serving.
- Serve your Pollo Asado with your favorite sides.
