Pollo Asado

Pollo asado is a delicious Mexican grilled chicken dish with a favorful marinade.

Ingredients

  • 1 whole chicken, cut into pieces
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 2 tablespoons white vinegar
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil

Method

  • In a bowl, mix together the minced garlic, cumin, oregano, smoked paprika, chili powder, coriander, black pepper, and salt to create the marinade.
  • Add the fresh orange juice, lime juice, white vinegar, chopped cilantro, and olive oil to the spice mixture. Whisk everything together until well combined.
  • Place the chicken pieces in a large resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken, making sure each piece is wellcoated. Seal the bag or cover the dish and refrigerate for at least 2 hours or preferably overnight. This allows the favors to penetrate the chicken.
  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade and let any excess drip off.
  • Grill the chicken pieces, turning occasionally, until they are fully cooked and have a nice char on the outside. This usually takes about 20-30 minutes, depending on the size of the pieces.
  • Check for doneness by making sure the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the grill and let it rest for a few minutes before serving.
  • Serve your Pollo Asado with your favorite sides.
